I have a very picky eater, and fruit is one of the only foods that he will eat, so I always have fruit on hand. But fruit can get so expensive, that’s why I love that this strawberry top syrup is a way to get one more use out of the strawberries before throwing them away!

Other added benefits of making your own syrup, are that you can control exactly what goes into it, avoiding unnecessary preservatives or artificial sweeteners. You can adjust the amount of sugar to your liking, making it as sweet as you prefer.

This strawberry top syrup is the perfect way to add a burst of fruity sweetness to your favorite drinks. My personal favorite is refreshing strawberry lemonade on a warm summer day. Although, it isn’t just for drinks—it can be used as a topping for yogurt, smoothies, and ice cream.


Homemade Strawberry Top Syrup

Making strawberry top syrup at home is incredibly easy, and the result is a flavorful, homemade treat that won’t last long especially with kids.

Ingredients
  

  • 1 cup Strawberry tops (green, leafy stems pulled off)
  • 1 cup Granulated sugar
  • 1 cup Water
  • Pinch of salt

Instructions
 

  • Wash the strawberries. Pull of the green, leafy stem and then slice the tops off of the strawberries.
  • In a medium saucepan, combine all of the ingredients. Bring to a boil. Once boiling, lower heat and let simmer for about 20 minutes, stirring occasionally.
  • Once the strawberries have lost their color, turn off heat and strain syrup through a mesh strainer. Making sure to press the strawberries against the strainer with a utensil to make sure you get all of the juicy goodness out of the strawberries.
  • Allow the syrup to cool to room temperature, then transfer it to a jar or airtight container. Store the syrup in the refrigerator for up two weeks. If you want to keep it longer you can freeze it.

Notes

If you don’t have time to make the syrup right away, you can throw the strawberry tops in the freezer and make it later. I like to freeze the tops until I can make a big batch of syrup!
